crustless quiche

So I made an extremely delicious quiche. It it crustless since I am paleo, a way of eating that basically eliminates refined carbs (bread, crackers, pasta etc.) You would think it would suck to not eat those things but I don't miss it that much and I feel goood. [Side note: I am not doing this to lose weight, but to help my progress with athletic training]

This quiche is honestly sooo good. So here you go :)

ingredients:
8 large eggs                               
6 oz asparagus, cut into 1 inch lengths
1/2 cup milk
1 tsp salt
3 slices rye bread, cubed
4 oz Gruyere cheese, grated
1 tbs olive oil
1 cup napa cabbage, shredded
1 leek, chopped

 

directions:
(1) preheat the oven to 375˚ F — 
(2) whisk the eggs in a bowl with milk until smooth
 (3) cut three slices of bread into 1/2 inch cubes — add to egg mixture


(4) chop leek and asparagus, add to a pan with olive oil and salt
 (5) saute leeks until softened — add leeks and saute for one minute

(6) add egg mixture to the pan and reduce heat

  (7) shred/chop cabbage and add to the pan

 (8) grate more cheese on top if you want — put pan into the oven and cook for 25 minutes

(9) let set for 5 minutes, eat and enjoy! :)

rich chocolate truffles

So here's something I haven't done in a while, a recipe post! These square truffles are extremely rich and delicious.

ingredients:
14 0z dark//bittersweet chocolate
   
200 ml heavy cream
1 tbs coco powder
  
[put cream in a sauce pan and heat until it almost reaches a boil]
[roughly chop chocolate and add to sauce pan]
[put the mixture in the dish and refrigerate]
[cut into squares with a knife and dust with coco powder//run the knife under warm water first]

almond brownies

best brownies ever — update: I may be posting a little less because there is no computer at my mother's house.


ingredients:
3/4 cups sugar                                         2 eggs
1 tsp vanilla                                              1/2 cup almonds, chopped
1/2 cup flour                                            10 oz semisweet chocolate chips 
 {heat chocolate in a saucepan on medium heat}
 {add sugar and vanilla}
 {stir until smooth and glossy, cool to lukewarm}
 {add eggs, one at a time}
 {add flour and stir well}
{add almonds, and put in a large baking dish}
{bake at 350˚ for 25 minutes}

oatmeal chocolate chip cookies

a classic cookie. yumm

cookies:
1 stick plus 6 tbs butter, softened                         3 cups flour
3/4 cups brown sugar                                             1/2 tsp ground cinnamon
1/2 cups sugar                                                          1/4 tsp salt
1 tsp vanilla                                                              1 1/2 cups oats
2 eggs                                                                        1 cup chocolate chips
1 tsp baking soda


{beat butter and both sugars together in a large bowl with electric mixer}
{add eggs and vanilla}
{add flour, baking soda, cinnamon, and salt}

{mix in oats}
{add chocolate chips; mix by hand}
{I used half mini chips and half large/normal sized chocolate chips}
 
{drop dough in round balls on cookie sheet — bake for 8 to 10 minutes at 350˚}
 SO SORRY 
I didn't get any picture of the final product! :( I had refrigerated the batter and baked them later that night so the lighting was terrible!

orange & almond cupcakes

this is a great recipe that I just found. the almond and orange are a great combination. makes 10-12 cupcakes. 

P.S. surprise! I said that "i'll ride across the park" was going to be my last post until I came back. but I forgot that I scheduled this one! :) 

2 eggs                                                   7 tbs sugar
zest of 1 orange                                  1/4 cup ground almonds
3 tbs potato flour                              1/3 cup slivered almonds
2 tbs confectioner's sugar 

 {beat eggs and sugar together for 5-10 minutes, until thick and pale}
 {grate 1 orange and add the zest to the eggs and sugar}
{add ground almonds} 
 {add potato flour}
 {mix all ingredients together}
{fill muffin tins about 2/3 full, top with slivered almonds — bake for 22 minutes at 325˚} 
 {dust with confectioner's sugar}

strawberry sorbet




I'm not sure if you guys have been stuck, so unfortunately, in a heat wave like me... but it has been so incredibly hot this past week — I wouldn't dare turn on the oven. I went to the beach the other day, and I couldn't stay out of the water for more than two minutes because it was so hot. The perfect solution: sorbet. 


ingredients:
1 pint fresh strawberries                               1/2 cup simple syrup*
1 tbs orange juice


*simple syrup: boil 1 cup sugar  + 1 cup water


strawberry sorbet:
 {cut up strawberries and add to blender}

 {add orange juice}
 {add simple syrup (it looks like water but that's just because the sugar dissolves while boiling)}
 {pour into a bowl and freeze for approximately 2 hours}

{all of the bowls I like were in the dish washer so I used a bread pan (: } 

Although I didn't have an ice cream maker, the sorbet turned out really well. But if you do have one, I would suggest using it! It was delicious and refreshing! Enjoy :)

hazelnut cookies

these cute little cookies make for a great snack, or dessert {this is the recipe I used in a guest post on Olivia's blog}

cookies:
1/2 cups hazelnuts
1/4 cups (+ 3 tbs) sugar
3/4 cups flour
1 stick butter 



{toast hazelnuts in a shallow baking pan for about 6-7 minutes— using a towel, rub off hazelnut skins}

{pulse nuts and 1/4 cups sugar in a food processor, add flour and a little salt}

{add butter and blend until dough forms a ball (if the dough is too dry, add a bit of water)}

{mix in about 1/2 cup chopped bittersweet chocolate chips (optional)}

{split dough in two, and roll into this 11 inch logs — chill for 1 hour}

{cut logs into 1/2 inch slices, and place apart on a baking sheet}

{bake for 12-15 minutes — cool and dip in remaining 3 tbs sugar}
