beneath the sun

This weekend Olivia and I spent the weekend in the sun :) [finally after what seemed like weeks of rain.] On sunday we biked to Town Landing and ate about 20 ice pops... 


Then on Monday (Memorial Day) we went sailing! It was soo much fun — we got off to a slow start but as the wind picked up we went very fast for such a little sail boat (I even got to sail it myself for the first time) After sailing around, we stopped on this little island and laid out on the beach. Plus I took my first swim (and sunburn) of the season :)

devil's food cupcakes

cupcakes:

4 ounces unsweetened chocolate	1 cup brewed coffee
2 cups sugar	1/2 cup sour cream
1 1/2 cups flour	1/2 cup vegetable oil
3/4 tsp baking soda	2 large eggs
1/2 tsp salt

frosting:

1/2 cups butter	4 tbs heavy cream
3 cups confectioner’s sugar	1 tsp vanilla
3 tbs cocoa powder

 
cupcakes:

{melt the chocolate in a double boiler over hot water, or in microwave}

{sift the sugar, flour, baking soda, and salt together in a bowl}

{brew hot coffee}

{wisk together the coffee, sour cream, and vegetable oil}

{gradually wisk in eggs, then wisk in the chocolate}

{add the dry ingredients to the wet ingredients}

{fill muffin tins 2/3 full and bake at 350˚F for 20-25 minutes}

 {cream the butter}

 {sift the sugar and cocoa powder, and add to the butter}

{add the cream and vanilla and mix}

 {frost cupcakes}

{...and eat}

Okay so I just wanted to do a quick post about these beautiful flowers that I saw today — my mom and I were driving and I have to pull over to get some pictures of these, luckily I had my camera handy :) enjoy.

there's a shortcut down the beaten path

 So yesterday, Olivia and I went down to the beach and although it was cloudy, we got some good pictures. It was perfectly sunny earlier in the day, but unfortunately I got to Olivia's house too late and the clouds had already rolled in.

We also got some fun videos (one being my new favorite friend, the dog Bezlo, the cutest dog in the world! :D) As Olivia mentioned, there aren't a ton of videos of me, but it's a video for one of my favorite songs, Race You by Elizabeth and the Catapult :)

We went back to the beach today, originally to go fishing but we didn't have the right equipment. Instead we nursed a crab back to health after finding it on the dock.
